Kefir,<br \/>\nbeyaz\u0131mtrak renkte, karn\u0131bahar\u0131 and\u0131r\u0131r \u015fekilde ve genellikle bezelye veya f\u0131nd\u0131k b\u00fcy\u00fckl\u00fc\u011f\u00fcnde<br \/>\nt\u00e2nelerden meydana gelmi\u015ftir.<\/p>\n<p>Kefir t\u00e2nesinde; torula mayalar\u0131, sacharamyces kefir, streptococcus<br \/>\ncremoris, betabacterium caucasium gibi mikroorganizmalar bulunur. Bunlar\u0131n faaliyeti sonucu s\u00fct<br \/>\nasidi, etil alkol ve karbondioksit meydana gelir. Kefir t\u00e2nesi i\u00e7erisinde bulunan mikroorganizmalardan<br \/>\nb\u00e2z\u0131lar\u0131 s\u00fct \u015fekerini par\u00e7alayarak s\u00fct asidi h\u00e2s\u0131l ederler ve s\u00fct p\u0131ht\u0131la\u015f\u0131r. Mikroorganizmalardan baz\u0131lar\u0131<br \/>\nise karbondioksit ve etil alkol meydana getirirler. Fermantasyon sonucu kefir ad\u0131 verilen hafif ek\u015fimsi,<br \/>\nk\u00f6p\u00fckl\u00fc, alkoll\u00fc ve yo\u011furt k\u0131vam\u0131nda bir s\u00fct i\u00e7kisi ortaya \u00e7\u0131kar. Kefir yap\u0131m\u0131nda inek, koyun, ke\u00e7i,<br \/>\nmanda s\u00fctleri ya\u011fl\u0131 veya ya\u011fs\u0131z olsun kullan\u0131labilir.<br \/>\nKefirin bile\u015fimi \u015f\u00f6yledir:<br \/>\nSu: % 88-89<br \/>\nS\u00fct asidi: % 0,8-0,9<br \/>\nEtil alkol: % 0,6-1,1<br \/>\nS\u00fct \u015fekeri-laktoz: % 1,7-2,7<br \/>\nKazein: % 2,5-2,9<br \/>\nMineral Maddeleri: % 0,6-0,8<br \/>\nAlb\u00fcmin: % 0,1-0,3<br \/>\nYa\u011f: % 2,8-3,3<br \/>\nKefirin yap\u0131s\u0131n\u0131n laboratuvar ara\u015ft\u0131rmalar\u0131 sonucunda insan s\u0131hhatine zararl\u0131 oldu\u011fu anla\u015f\u0131lm\u0131\u015ft\u0131r. S\u00fct<br \/>\nunsurlar\u0131n\u0131n fermantasyon esn\u00e2s\u0131nda de\u011fi\u015fikli\u011fe u\u011framas\u0131 ile amino asitler, galaktoz, s\u00fct asidi, etil<br \/>\nalkol antibiyotik etkili maddeler ve tat-koku gibi maddeler te\u015fekk\u00fcl etmektedir.<\/p>\n<p>\u00c7e\u015fitli yay\u0131nlarda kefirin i\u015ftahs\u0131zl\u0131k, uykusuzluk, verem ve b\u00f6brek hastal\u0131klar\u0131nda, bron\u015fit ve ast\u0131mda,<br \/>\nekzema ted\u00e2visinde kullan\u0131ld\u0131\u011f\u0131 belirtilmektedir. Ancak b\u00e2z\u0131 hastalarda tam tersi olan sonu\u00e7lar h\u00e2s\u0131l<br \/>\netmekte ve ihtiv\u00e2 etti\u011fi \u00e7e\u015fitli maya ve alkolden dolay\u0131 zararl\u0131 olmaktad\u0131r.
